Save a Penny Sunday

Have you ever heard the old expression "He's so tight he squeaks when he walk"?  I'm not quite that bad, but I do try to make economical meals that my family enjoys. 

I thought I would share a few of my favorite penny saver recipes.



Crockpot chicken


Place 3 balls of aluminum foil in bottom of crock pot. This lets the juices drain from the chicken.

Place a whole 3-4lb. chicken on the foil after washing it.

Slice an onion and place on and around the chicken for flavor.

Drop 12 - 15 drops of Texas Pete or hot sauce on the chicken or more for desired taste.

Cook on high 4-6 hrs.

This chicken taste very similar to rotisserie chicken. It is not a bit hot from the hot sauce.




Hamburger Roll


Mix up enough biscuit mix to roll out into a large rectangle.

Brown one pound ground beef (deer), season with salt and pepper.  Lay down the middle of the dough lengthwise and sprinkle with shredded cheese.

Roll up and bake at 350 until golden brown.
*This can be customized many ways to suit your family's tastes.




Pickled Dilled Eggs


12 hard boiled eggs, shelled

1 medium onion, sliced thin

¾ cup water

1 ¼ cup white vinegar

2 tsp salt

1 tsp dill weed

1 clove garlic, halved



2-3 tbsp sugar – optional



Firmly pack eggs and onions alternately in glass jar(s). Boil remaining ingredients. Reduce heat to low and simmer 5-7 minutes. Pour over eggs and cover completely. Any remaining vinegar mixture may be used to cover cucumbers. Seal jars. Chill 3 days. Keeps 2-3 weeks in refrigerator.


Now I admit, the eggs are for hubby, I can't get the boys to even try them, but Ranger loves hardboiled eggs and can eat 5 or 6 at a time! 





Oh yes, my boys like to eat.  There are very few things that either one just won't eat.  What about you?  What are your go to budget meals?

I really appreciate you posting these recipes. I love recipes that use normal stuff that I actually have in the house and I will definitely be trying them.
Let's see, most of my meals are budget meals, lol. I do a lot of casseroles and there are some of those recipes on my blog, they are almost always a box of pasta, 2-8 oz bags of shredded cheese, a can of cream of something soup, a little milk to make the cream of something soup creamy and a vegetable. Mix everything together except on bag of cheese which you sprinkle on top and bake for about a half hour.
Our kind of shepherds pie is a baking dish (any size) with a layer of cooked hamburg and onion on the bottom, a layer of corn in the middle and a layer of mashed potatoes on top, bake until the top of the mashed potatoes is a little bit crispy (maybe 20 minutes).

In college I used to do wonders with a can of cream of mushroom soup, a can of corned beef, and some macaroni elbows!

Thanks for the foil tip in the crock pot -- I imagine that would work in a roaster as well if you don't have a rack handy.

Fried ground venison, parboiled rice and onion is my favorite go-to mixture for a quick meal. :)

Interesting meals, I may try some. I got a new cookbook from Family Circle and have been trying new things to spice up my meals and hit a few duds.Their desserts really look nice, but I have tried to stay away from those for a bit.

Oh, I miss eggs. Darn allergies I use to eat that many hard boiled eggs. Slowly I'm putting them back in my diet, like 1 a month. I love your recipes but I'm one of those cooks that just takes what ever they have and makes something out it. Never was good at following directions. Which is why I cannot bake worth a darn :)

I will use the balls of foil tip and the chicken recipe!
This is similar to your Hamburger roll. Brown ground beef with chopped onion. Drain well (I even rinse it with hot water). Return to pan and season as you like. Spoon onto a hamburger bun add a slice of cheese and wrap in foil. Bake in a slow oven until cheese is melted and bun is steamed.

I make a cheeseburger roll up (sometimes add bacon, its good). I'm a cheap, simple, good kinda cookin girl :)

Dan saw the picturs of the pickled eggs and wanted me to make some for him. One recipe I used to make used beet juice so the eggs were the color of beets. Mom
