Canning and canning and canning

The morning started off slow, but I was able to get busy quickly.  I canned 9 pints of spaghetti sauce and 12 pints of salsa.  Yesterday I made 9 pints of bread and butter pickles and 3 quarts of dill pickles.

The boys start school middle of next week.  I start the 29th.  I am ready for the routine.  I'm ready for the smell of new pencils and paper, the feel of next textbooks underneath my fingers but mostly I am ready for senior seminar and my internship.

The last batch of salsa is nearly finished and I have tomato seeds stuck to the ceiling, tomato pulp dribbled on the counters, cabinets, and stove.  Tomato skins in the garbage can are laughing at the havoc they've wreaked in my kitchen.

I'm off to scrub the kitchen.

I admire you for your canning skills and determination. I really want to learn how to do that.

Hard work but the payoff is nice. I like your explanation of the mess made.

Got lazy in my latter years....blanch, skin and freeze whole!
