Sasquatch Surprise Using Leftovers

Every now and then I attempt to create a dish that our whole family will eat.  Tonight I used up some of the leftover Christmas turkey. 


Ingredients

1 medium onion

olive oil

2 cups leftover, coarsely chopped turkey

2 cups cooked rice

1 cup mixed vegetables

1/2 cup shredded cheddar cheese

1 cup Velveeta cheese

1/2 cup milk

1 Tbsp butter

Salt and pepper to taste

Directions
Saute onion in oil until tender, add turkey and cook until heated through. Add velveeta and cook on low until melted. Stir in cooked rice and mixed vegetables. Stir in milk and butter. Top with shredded cheese and bake at 375 degrees until cheese is melted.


I did forget to snap a quick picture, but take my word for it, it was tasty!

When we have leftover veggies, I dump them all into a baggie and keep in the freezer until I have enough to make a big pot of soup.

HI Cathy, That sounds like a delicious left-over dish. We always freeze our left-overs and eat them later, in something similar to what you had...

Great pictures of the boys.... Interesting how kids in the same family can be so different, one from the other... I raised 3 boys and they are all unique in their own way...

Must be a KY thing I do the same thing with veggies. And anything with "Sasquatch" in the name has to be good :)

I might have even added sour cream. I make mexican with my leftover meats. Side dishes are made small so I don't have to eat them again very much. I like to fry leftover rice.Living by myself, after three meals, leftovers are finished. If the animlas don't go for it, it goes into the garden.My dad always said, "Its a long time before breakfast", to get us kids to eat what was left.He didn't like it the second time around.
